Cheese made from the three species of raw milk.
Medium odour intensity and a firm, melting texture. Cow’s milk dominates, sheep’s milk improves the texture and enhances the flavour and it has a slight goat’s milk flavour. Ripened for 8 months. It has an ivory-coloured inside and a chocolate-coloured rind.
Keep in a cool and dry place.

Raw milk from cow (min 70%), sheep (min 15%), goat (min 5%), salt, rennet, lactic ferments, stabiliser and egg-derived preservative. Inedible rind: contains preservatives and colouring. Origin of the milk: Spain.

In wedges, sticks, cubes or in the shape of a flower. Paired with white village bread and with some accompaniment such as black olives, salted anchovies and soft jam.
