What will I get if I drink it? What are the properties of cheese made from raw milk?

They have a natural microflora that gives the final product a richness of aromas, purity of flavour and delicate texture.
Cheese contains in concentrated form (depending on the degree of ripening) many of the nutrients of the milk from which it comes: proteins, fats, minerals and fat-soluble vitamins. This provides a very accessible and bioavailable source of the minerals calcium and phosphorus, which are necessary for healthy bones and teeth under normal conditions. It also has a high vitamin B12 content, which supports the normal functioning of the immune system.

What is the recommended daily amount?

As part of a healthy diet, it is recommended to drink milk and dairy products daily (two to three times per day), including cheese, to ensure a healthy, varied and balanced diet.
Any type of cheese can be consumed. In the case of cured cheeses, whose caloric value is higher due to their higher concentration of nutrients that provide energy it is advisable to eat no more than 30 or 40 grams. In the case of fresh cheeses, the portion can be larger 80 to 100 grams.

What should I do if I receive an order in poor condition?

What is meant by a batch?

The batch is the number we give to each of the daily processing vats in order to follow our strict traceability controls, from the raw material to the finished product.
Legally, a batch is the set of sales units of a food product produced, manufactured or packaged under virtually identical circumstances.
The indication of the batch on foodstuffs must be done in accordance with the provisions of “Royal Decree 1169/2011, which regulates the indications or marks that allow the identification of the batch to which a foodstuff belongs”.
The batch is necessary to guarantee the traceability of products from raw material to finished product.

Preservation

What is the ideal temperature for storing cheese? Is refrigerated transport necessary?

Cheese should be kept at a temperature of between 4 to 8ÂșC, which is why we serve all our orders in refrigerated transport, and we recommend that the cold chain is maintained until delivery to the end customer.

What is the raw milk?

Milk that has not undergone any thermal modification. Milk that has not undergone any heat treatment.
We specialise in making sheep’s and blended cheeses from raw milk. As raw milk cheeses are made with the raw material as it is received from the livestock farms without undergoing any heat treatment, they have a natural microflora that gives the final product a great richness of aromas, purity of flavour and delicate texture.

What is the origin of rennet?

The rennet contained in Valle San Juan cheeses is of animal origin.
