Raw milk sheep’s cheese. Dominated by the smell of beech smoke with hints of roasted and toasted nuts. Balanced in mouth both in the nuances of the cheese and the smoke. Ripening for 6 months. It has a yellowish ivory colour on the inside. Reddish-brown rind.
Keep in a cool and dry place.

It is a pure sheep’s milk cheese but with its own pairing, the smoked cheese. This already offers a toasted, roasted flavour, with sweet touches (caramelised sugars, black liquorice)


In wedges, sticks or cubes with the rest of the rind so that the smoked flavour dominates the dish. Accompanied with almonds, sweet fruits such as grapes, dried apricots or some jam.
